Sugo occupies the ground floor of the Lighthouse Building on Mitchell Street, Charles Rennie Mackintosh's very first public commission, and fills it with noise, steam, and the kind of energy that makes food photography genuinely exciting. The menu travels through the regions of Italy: Lazio, Tuscany, Sicily, Puglia, Abruzzo, Campania, Piedmont, Lombardy, each dish rooted in a specific place, a specific tradition. My brief was to honour that specificity: to make each bowl look like it came from somewhere, not just a kitchen.
The reportage work runs alongside the food, chefs at the pass, the open kitchen mid-service, the room at full tilt. Twenty-five chefs, two hundred covers, and a room that fills every night. There's no shortage of things worth photographing. These images are the ones that made the edit.
